Applesauce Bread

I rewrote this recipe a while ago and can't remember the original source. I will link to it when it comes to me. There is no added sugar, but the raisins and dried apricots add to the sweetness. Some people might prefer to add some form of sugar as well.

APPLESAUCE BREAD

Ingredients
1 cup whole-wheat flour
1 cup white whole-wheat flour or all-purpose flour
2 tsp baking soda
1 tsp baking powder
2 tsp cinnamon
1 tsp ground ginger
1 tsp vanilla
1½ cup unsweetened applesauce
½ cup sunflower oil or light olive oil
½ cup raisins
½ cup chopped dried apricots
½ cup chopped walnuts
1 Tbs Ener-G egg replacer + 4 Tbs warm water (or other substitution for 2 eggs)

Directions
Preheat oven to 350°F.
Soak raisins and apricots in hot water for at least 5 minutes.
Combine flours, baking powder, baking soda, ginger, and cinnamon into large mixing bowl. Stir gently.
In separate bowl, combine applesauce and vanilla. Add to flour mixture and mix well.
Add oil and stir until mixed.
Stir in raisins, apricots, and walnuts.
Add warm water to egg replacer powder and stir until dissolved. Add to batter and stir gently.
Pour into nonstick loaf pan and press in with spatula.
Bake for about 1 hour and 5 minutes, or until skewer comes out clean.
Cool in pan for several minutes, then turn out onto wire rack.
