Maple Dijon Chicken (slow cooker)

I recently rediscovered my crockpot! I am slowly finding recipes that we can use. Here is a new favorite, adapted from the Maple Dijon Chicken recipe in the cookbook Make It Fast, Cook It Slow.

SLOW COOKER MAPLE DIJON CHICKEN

Ingredients
1 lb chicken pieces
1 cup chicken broth
2 sweet potatoes, peeled and chopped
½ cup fennel, chopped
2 Tbs Dijon mustard (made with apple cider vinegar)
3 Tbs maple syrup
2 bay leaves
1 tsp ground thyme

Directions
Put chicken into bottom of 4-quart crockpot and toss with thyme, maple syrup, and Dijon mustard.
Peel and slice sweet potatoes, and add to pot. Sprinkle fennel around top of chicken and sweet potatoes.
Pour in chicken broth. Add bay leaves.
Cover and cook on low for 6-8 hours, or on high for 4-5 hours. Done when chicken is cooked through and vegetables reach desired tenderness.
