Oatmeal-Raisin Bars

Each tub of Quaker Oats has a recipe for Vanishing Oatmeal Raisin Cookies on the lid. I have adapted the bar cookie recipe slightly.

OATMEAL-RAISIN BARS

Ingredients
1 cup whole-wheat flour
½ cup white whole-wheat flour or all-purpose flour
1 tsp baking soda
2 tsp baking powder
2 tsp cinnamon
½ tsp salt
½ cup ground walnuts
¾ cup unsweetened applesauce
1 cup extra light olive oil
1 tsp vanilla
½ cup firmly packed brown sugar
3 Tbs granulated sugar
3 cups quick oats (uncooked)
1 cup raisins
1 Tbs Ener-G egg replacer + 4 Tbs warm water (or other substitution for 2 eggs)

Directions
Heat oven to 350 degrees.
Combine flours, baking soda, baking powder, cinnamon, salt, and ground walnuts. Set aside.
Whisk together applesauce and vanilla. Add sugars and beat well. Add oil. While stirring, add a spoonful of flour mixture to keep oil from separating.
Gradually add flour mixture to wet ingredients. Mix well.
Stir in oats. Stir in raisins.
Add warm water to egg replacer powder and stir until dissolved. Add to batter and stir gently.
Press mixture into ungreased 13x9-inch metal baking pan.
Bake for 35 minutes. Allow to cool slightly before slicing.
