I found this recipe in a Whole Foods leaflet, but it is originally from Martha Stewart's "Everyday Food" magazine.
Recipe for Roasted Salmon with Lemon Relish
Because spinach is on The List, I steamed some baby bok choy in its place. That was the only substitution necessary for this recipe!
The kids did eat their salmon without the relish. There was a bit of relish left, and it was delicious with roast chicken as well.
