I'm the only one who likes pumpkin pie in our family, so I found a recipe for Vegan Apple Pie. My daughter loves this apple pie. After eating it for Thanksgiving, she has already requested it for her summer birthday.
I save all the apple water as the corn starch requires more than 1/4 cup. I also bake the pie for 40 minutes or longer.
I don't use the recommended pie crust, but found a recipe for Vegan Pie Crust elsewhere.
